Baked Mac and Cheese Cupcakes

Tonight’s dinner is courtesy of Giada – via the ever fabulous Jessica at How Sweet It Is. :) You can find Giada’s version here, or Jessica’s version that I will be using, here.

I actually had something similar to most of the ingredients on hand, so I just substituted.  Here is what I did.

  • I used regular  rigatoni instead of whole wheat pasta.
  • For the cheeses, I used 1/2 cup marble jack, 1/2 cup mozzarella and 1/4 cup parmesan.
  • Instead of whole wheat bread crumbs, I used the Panko bread crumbs I had on hand.

I didn’t leave anything out of this recipe.  Yes,  I even added the tomatoes.

One thing that I should mention – and I feel like I should have mentioned in the past – it is the one kitchen item that I feel is such a huge help in prepping food.  This, my friends, is the Food Chopper from Pampered Chef.

I will admit, I might be a bit biased because I was a Pampered Chef consultant a while back, but I really believe it is the best.  It chops practically anything, and does it evenly, and you can chop it really tiny – we like to use it to dice garlic.  It also comes totally apart, so it is easy to clean, and you can put it in the dishwasher!!  It really is awesome.  I used it to chop the zucchini and it worked perfectly.

I made a bit of a mess trying to coat the muffin tin with bread crumbs.  But who needs a vacuum cleaner when you’ve got one of these:

Ok, back to the recipe.

They were pretty easy to make, and none of the ingredients were hard to find.  In fact, as Jessica suggested, it would be very easy to substitute, add, or subtract things.  In Giada’s original recipe, she adds adds chicken or turkey – and lots more veggies.  Personally, I would add more zucchini, and I’m sure you all can think of many other things to add!

How did they taste?  Fantastic.  I suppose the only thing I could complain about is that I didn’t eat the tomatoes.  But that didn’t hurt the taste of the rest of it.  Just like all of the rest of the recipes found on How Sweet It Is, it was really good.  If you have not visited her site before, do it now.  You will find a plethora of delicious things – including lots of delicious brownie recipes. :)

Ease: B, a little bit of prep work, but not too bad, and so worth it in the end.
Taste: A+, fantastic.  Really, really good.

Will I make it again? Yes.  Yes I will.

What is your one must have kitchen accessory?
I’ve pointed out one already, but the other is another PC product.  Its called a deep covered baker.  I would link you to it, but apparently it isn’t available right now? What?
