Lemon Blueberry Scones

Many times I decide to make desserts on a whim.  Really for no reason at all.  When this happens, I try to find a recipe that I already have a lot of the ingredients for.  This was one of those times.  For these scones, the only thing I didn’t have on hand was the cream.

I used to be a huge chocolate dessert fan.  Ok, really  I still am.  I have recently started to really love lemon flavored desserts.  They seem to be just generally lighter than chocolate flavored desserts.

I think it might have started with the lemon cake that I tried when we were tasting cakes for our wedding.  We ended having lemon cake with raspberry mousse.

I think it was the best cake I have ever had. ….even if the first taste didn’t exactly make it into my mouth.

Anyways.

I’ve never made scones before – and actually I’m not sure if I really even like them – but I was in the mood to try something different, so I thought I’d give them a try.

While making these I realized that I need a pastry blender.  As much fun as it is to mash butter and flour around with my fingers, it seems like it would be easier and more efficient to do it with something made for that specific purpose.

Other than the cutting in the butter into the flour, the rest of the process was not difficult.

Although, my dough came out a lot thicker than she described….might be why mine seem to be chunkier and not quite as smooth-edged as “normal” scones.  The chunkiness made it difficult to mix in the blueberries and roll out.  I’m not sure what I really did wrong that might have caused this….but its not how they look like that matters, its how they taste, right?

I didn’t have time to make the glaze to go on top of them, but I think I would have liked them more if I had.  They tasted kind of bitter to me.  I understand that scones are not supposed to taste like cookies, but these really didn’t do much for me.  They tasted pretty dry as well, but I think this is how scones are supposed to taste?

They were good enough not to throw away, but not great.

Ease: B+, cutting in the butter is the worst, especially if you don’t have a pastry blender.  But everything else is not bad.
Taste: B-, I guess I’m not sure if it is scones in general that I am not a fan of, or it is just this variety.

Will I make them again? Probably not.  I would like to try another scone recipe though to see if it is scones in general that I dislike, or just this recipe.

Aside from the ever famous Savvy Scones ,
does anyone else have a fabulous scone recipe that I should try?
