French Toast Muffins

This morning, I woke up and decided that I was in the mood for baking.  Maybe it had something to do with the fact the Julie and Julia was on the TV, or maybe it was because I really wanted to blog about something delicious that I made, and the Chins that I had for dinner last night or the bagel with cream cheese that I had for breakfast this morning just wasn’t going to cut it.

This recipe has been on my list to make for a long time, and I have never made it before because I never had buttermilk on hand.  Today, I still don’t have buttermilk on hand, but I read about all kinds of things you can substitute for it to try to solve my problem!  There were many different things that you could do as a substitute for buttermilk, but I was not feeling very adventurous this morning so I chose the simplest option. Use regular milk.

I’m sure it didn’t give the muffins the exact same flavor, but it didn’t seem to hurt them either.

Overall I think they turned out well.  The process was a bit different than the typical blend wet ingredients, blend dry ingredients, and mix.  Different, but not difficult.  In fact, I think it might actually have been easier.  Since you melt the butter, it is definitely easy to mix it all by hand without a mixer.

On a side note, I love my stand mixer.  I use it for everything.  Really everything.  Even boxed brownie mix.  I don’t know what I ever did without it.  🙂

Adding the maple syrup and powdered sugar at the end makes them so pretty, don’t you think?

One thing I really like about this recipe is that it only makes 12 normal sized muffins.  This is great because I don’t always need 24 giant muffins hanging around and I only have one regular sized muffin tin.

Ease: A, nothing really difficult at all.
Taste: A-, they were good but not my favorite.  I’m not a huge fan of nutmeg, so I think without that, or even just with less of that, they would have been great!

Would I make them again? Yeah I think so.  Even though I didn’t love them, they are so pretty -and not to mention, easy!  They would be perfect to bring to a brunch or breakfast get together.  Although, if you did that I would recommend waiting to put the finishing touches on until you are at the final location.  I’m betting they would get kind of soggy if they had maple syrup sitting on them for a long time, and the powdered sugar would then soak into the maple syrup.  They just wouldn’t look as pretty 🙂

Nutmeg reminds me of pumpkin pie.  Pumpkin pie reminds me of Fall.  I love Fall.  Leaves changing colors, cooler weather, long sleeves, no drastic shift from hot outside to cold inside, college football, holidays. Love.

    Apple cider and cinnamon and peppermint make me think of fall/fall fading into winter.

    I love fall for the cooler weather! CRUCIAL, down here in TX!
