When Heather, Julie and Evan announced Macaroon Monday I was excited. There are so many things that I want to try I didn’t know what to make! I thought about making macaroons along with the other three, but decided on biscotti instead. I don’t know that I’m a huge fan of biscotti, but they were something different to make!
I found a pretty awesome sounding biscotti recipe in a Better Homes and Gardens Christmas Cookie magazine that I bought. If there is one kind of biscotti that I might like, it would be Chocolate-Peppermint. You can find the recipe here.
The only thing that I changed is that I used semi-sweet chocolates instead of bittersweet because I had them on hand.
Overall the recipe was not hard – although it was time consuming.
It would have been a lot easier to crush the peppermint candies if they were candy canes and not the hard round peppermints. Those definitely took some muscle to crush. And, as you can see by the photo, they didn’t exactly crush very evenly. But I suppose that is what I get for making “Christmas” cookies before it is really Christmas season.
Yeah, that’s right, it is the day after Halloween and I made Christmas cookies. I’ll just call it a practice batch for Handmade Christmas 2010….also I really like chocolate and peppermint. 🙂
Ease: B-, it didn’t take a lot of skill but it did take a lot of time. 1 hour for the dough to chill, 1 hour for the loaves to cool, and then another bit of time after they are cooked the second time for them to cool before they can be frosted. That is a lot of time to put into cookies.
Taste: A, I actually really liked these! It kind of surprised me because I am usually more of a fan of chewy brownie-like desserts. I can see them being very good with coffee, or hot chocolate. Also, they would make great Christmas gifts, they are very festive looking!
Would I make them again? Yes, I think Ill be making them again for Christmas!

I realize chocolate-pepperment biscotti isn’t exactly traditional biscotti,
does anyone have a recipe for a more traditional biscotti that they love?

Wow! How delicious. Biscotti are something that always take a lot of work and patience but are usually worth it. Last year I made peanut butter and chocolate biscotti and everyone seemed to love them.
