Easy Parmesan Baked Tilapia

I don’t really like fish.

Wait, I take that back.  I’ve never really eaten a lot of fish.  Except fish sticks…..but really…

About a year ago I was in New York with my mother-in-law/boss for a work trip.  We went to a little Irish pub for dinner.  I’m not a pot pie kinda girl, and I was feeling adventurous…….so I had the fish fry.  When I told people about this after I got home from the trip, no one believed me.  I wish I had a photo for you, because I’m sure you don’t believe me either.

I didn’t love the fish fry – but it wasn’t bad – and I ‘m not sure why I was avoiding it all these years.

Last summer, I started making the Thinkfood recipes.  One came along that involved making salmon.  I made it. And I kinda liked it.  (you can find my review here.)

Last week, Jessica came up with a recipe using tilapia. The photos of the cheesy fish looked delicious! I found myself wanting to make a recipe involving fish.  Really? I know.  The recipe involved only ingredients that I like – and love – like garlic, cheese and butter. You can find the recipe here.

Parm Tilapia

We ate the fish with some buttered garlic pasta. (It ended up being a bit too much garlic all in all, but we learned our lesson for next time)

You  should go over and look at Jess’ photos of the fish, because they are much prettier than mine.   :)  I think our fish to cheese ratio wasn’t quite right.  BUT it still tasted good!  Delicious even! MMmmmmmm cheesy, buttery, garlicky, fish.

Ease: A, so much easier than I ever thought fish would be to make.  A little bit of mixing and careful flipping, but nothing hard at all.
Taste: A, I know I’m confused too.  I don’t like fish! But apparently I do……

Would I make it again? Yeah, I think so!  This time I used fresh fish (which I prefer over frozen) but it was the only thing I didn’t already have on hand.  Maybe I will buy some frozen fillets and it will be an even easier dinner!

The snow is here! Hopefully you are all in a nice warm and cozy spot, and not having the deal with the snowstorm messes that are happening around the country right now.  Or, I suppose, if you are in a part of the world that somehow doesn’t have snow right now, that would solve the problem too.  Lucky you.

I’m glad I’m able to just chill at night and not have to go anywhere in this mess, but I kind of wish it was during the day so I could watch the swirling snow…….   I know, I’m a crazy person, but I actually do really like the snow!  Just in moderation…..

  1. i think you’re going to get your wish – the snow+wind is supposed to stick around through tomorrow. i hope you can enjoy it then!

    and this recipe looks delicious. i can’t believe you live in wisconsin and don’t like fish – i don’t know if that’s allowed. fish fries are like an integral part of our culture! :)

  2. I am glad you (sort of? lol!) liked it! And if you don’t like fish, have you tried my homemade healthy fish sticks yet?!?
