One of the things that I miss about being home, is cooking.
If I am at home and feel like a certain food, I can make it. If I am traveling, it takes a bit more work.
There were so many things floating through my brain that I wanted to make when I got home. Things that were inspired from foods that I ate on the trip, blog posts, even just being around certain people, or in certain areas of the country.
These muffins, I suppose, were a combination of two things that I was inspired by. One was the fact that I wanted something sweet, and to use up some things in my cupboards. You could also say that I was inspired by the fact that this recipe was written by Savvy Julie – who was one of the lovely ladies that I visited last weekend. 🙂

I did change a couple of things because of what ingredients I had on hand. I used all-purpose flour instead of whole wheat (I realize that that does take the “wholesome-ness” of this recipe down a notch) I also only had about half of the amount of blueberries, so I used about half blueberries and half raspberries.
Overall, the recipe was very easy. I didn’t even use my awesome Kitchen Aid mixer, and I use that for everything. Seriously. I use it to make boxed brownie mixes. I was afraid it was going to be hard to mix with a fork (because my arm strength is seriously lacking and I often end up with chunks when recipes suggest mixing this way) but it was really no problem at all.
These are definitely more breakfast muffins than dessert muffins. That doesn’t bother me though, sometimes I don’t always want loads of sugar for dessert. Aaaaaand I could always just spread some Nutella on them, and things would be all good. But really, they don’t need that, they are good enough plain, or maybe with a little butter.
Ease: A+, really easy. Everything is mixed with a fork, and it just takes a few minutes to whip up.
Taste: A, solid muffins. I actually didn’t really like my addition of raspberries, but the lemony flavor is great.
Would I make them again? Yes. I’m thinking they would be good in bread form too. Oooh maybe with some lemon glaze on them……mmmmmmmmmmmm.
Do you get sick of eating out all of the time while you are on vacation? I loved most of the restaurants that I went to while on this trip, but sometimes I just want home cooked food. I think this comes a lot from the fact that I am so picky, so it is easier for me to just always get certain dishes whereas I would be willing to try more if I was making it myself.
Is there a type of food that you always crave while you are on vacation? I rarely ever eat steak when I am at home (or really meat in general) but for some reason, I always end up going to a steakhouse when I am on vacation. Luckily, the steak is always delicious so it is totally worth it.

I love to eat at restaurants (and home AND vacationing!) so to me that’s a perk… there comes a point though, where I want to be home in my kitchen and cooking! depending on where I am vacationing, I want to try sushi! I could eat it every day…
