When someone warns me that a muffin recipe tastes “healthy” I am often turned away. However, for some reason when Gracie said that about this recipe, I still wanted to make the muffins. Maybe it was because I had flaxseed and bananas to use up anyways? Maybe it was because she mentioned that they were modeled after muffins that she had at Starbucks? Who knows. All that I know is that I made the right choice.
You can find Gracie’s recipe here.
There were extremely easy to make. I didn’t even use my stand mixer, and I use my mixer for everything!
Not only were they super easy to make, they were also delicious! Its true, they did definitely have a “healthy” taste to them as opposed to a “desserty” taste. But I’m ok with that.
Another thing that I really like about Gracie’s recipe is that it makes 6-7 muffins. Not 12. Not 18. Not 24. The perfect amount. Yes, I realize I could just half a recipe and get the same results…..but I’m not so good at remembering to half every ingredient when I make cookies…..so yeah, this is easier.
Ease: A+, really super simple. Yes, even you could do it!
Taste: A+, really good! They do have a more muffiny taste as opposed to a cupcake leaning muffin, so I guess you have to be in the right kind of mood to know that you muffin won’t be super sweet.
Would I make them again? Definitely. I have already made them a couple of times. 🙂

Ah, YAY!! Thanks so much for the review, girl 🙂 It’s always so difficult for me to “invent” my own recipes because even if I think it tastes good, I’m never sure if other people will think so too (and since I live alone, I don’t have anyone to taste-test for me!). So this is very, very much appreciated 🙂

oh wow – this looks great! i’m with you on the beauty of making fewer muffins. i never remember to halve recipes either and then i’m pawning away my cookies, muffins, etc. on whoever i can get to take them bc i don’t want to eat a whole batch!
