Creamy Chicken Potpie

For some reason when people mention “comfort foods” I often think of potpie.  I’m not really sure why this is.  I don’t love potpie.  I didn’t have it a lot as a kid  – and my mom didn’t make it a lot when I was growing up either.  Those are generally the reasons that I think things are thought of as “comfort foods.”

Either way, it seemed like something that is kind of a traditional dinner food that I thought I’d try my hand at. …..and I had some leftover puff pastry from these that needed to be used.

The recipe I used (aka – the easiest recipe I could find) is from Real Simple Magazine.  You can find the recipe here.

Really, this was a super easy recipe.  The only issue that I ran into is that the recipe calls for two cans of Corn Chowder.  I looked at two different grocery stores and the only thing I could find was Chicken Corn Chowder.  I figured this was similar and should be ok because the recipe had chicken in it anyways.  Should I have looked harder?  Should I have looked in a different section of the store?  Anyone know where I can find corn chowder?

Anyways, the rest of it wasn’t too difficult at all.  Mostly just combining everything and then putting the puff pastry on top.

Please note: Defrost your pastry dough ahead of time.  Mine was defrosted enough to unfold it and put it on the top, but it was definitely not all the way defrosted.  Because of this, the edged cooked perfectly but the center – which was definitely more frozen to start with – was still kinda doughy when it was done cooking.

I actually kinda liked this. If the crust was properly cooked I think I would have liked it even more.  Really though, there wasn’t anything in it that I don’t like.  In fact, peas and corn are two of my favorite vegetables!

It was definitely a filling, comforting dinner 🙂

Ease: A, definitely easy enough to make at the last second on a weeknight.
Taste: B+ not quite perfect for me, but if I would have cooked the crust correctly I think it would have been even better.

Would I make it again? I think so.  The Husband really liked it, so it is definitely a weeknight meal possibility.  Next time though I think I’ll look harder for the Corn Chowder.  I liked the rotisserie chicken, but the chicken from the corn chowder was too much.  Also, I think I would add more potatoes than what are in the chowder.  Because I love potatoes.

  1. I am very much a pot pie fan, but I DID grow up eating it, so that’s probably why. 🙂 This looks delicious!

  2. thats how i like my crust i wont eat it if its at all burned
