I almost always have banana’s in the house. I suppose this has something to do with the fact that we always had banana’s in the house when I lived with my parents. (My dad is a bit of a banana fanatic.) Unfortunately, unlike my Dad, who will eat banana’s until they are basically a pile of mush, I prefer a less ripe variety. In the summer though, banana’s can go from good to bad very quickly.
Enter: Banana Bread.
Even though I may not like to eat raw banana’s once they start to get super ripe, they are perfect for making banana bread!

This bread was not difficult at all to make. In fact, I didn’t even use my stand mixer to mix them – now that’s saying something about how easily it is to make!
The bread tasted good, but not super sweet – which is not necessarily a bad thing. It definitely is more like a breakfast bread than a dessert bread. The texture was great as well, I love adding Greek Yogurt to breads because I love the texture that it gives them! I don’t love blueberries, but this bread was so good I ate them anyways!
Ease: A+, very easy.
Taste: A, definitely a solid bread.
Would I make it again? Yeah, I think so. I was quick and easy, and even if I didn’t happen to have blueberries, I think it would be just as good without them.
