In addition to the Cheesecake and Fruit Pizza’s, the third thing that I brought to the big Fourth of July celebration was potato salad. I am not a fan of the mayo filled potato salad, but I am a fan of potatoes, so I was very excited when I found this recipe on Savvy Eats.
This has a much lighter dish, with a definite garlic taste. You can find the recipe here.
Overall it was very easy to make – thanks to a food processor! People were again kind of concerned about the greenness of this dish, but once they learned that it was basically just garlic pesto on the potatoes, they came around and tried it. Personally, I thought this dish was delicious! I really liked the potatoes, and the garlic, and the eggs all together. YUM!
Ease: A, with the help of a food processor, this was not a big deal at all.
Taste: A+, I really liked this a lot.
Would I make this again? Yes! This would be a great dish for a potluck, or summer meal.
