Fruit Pizza (Again)

Fruit pizza seems to be a fun and fairly easy party dessert.  If you remember, I made two different varieties for a Fourth of July party earlier this year.  This version of fruit pizza was made for my cousin’s baby shower.  Since there were going to be plenty of other sweets and treats I only brought one this time.

I chose a sugar cookie crust.  This time, rather than being lazy and just buying store-bought dough, I made my own.  I used Martha Stewart’s “Ideal Sugar Cookie” recipe.  You can find that here.

Another thing that I did different this time was that I used disposable aluminum “pizza pans” to cook the cookie on.  I randomly found these while I was at the grocery store getting fruit.  They are larger than the last pans than I used, but they work a lot better.  They are easier to get the “pizza” out and easier to tell how thick the dough is.  We cooked the giant cookie in one of these pans for about 5 minutes longer than the recipe suggested since it is quite a bit larger than the average sugar cookie.  Or at least sugar cookies that I normally make. 😉

The frosting that I chose this time around was a cream cheese frosting.  This time I used the recipe from the book Cupcakes! by Elinor Klivans  I also found it online here.  It was really simple, and very tasty – but for something that consists of butter, cream cheese, powdered sugar and a dash of vanilla extract, it doesn’t surprise me that it was delicious.

After frosting, the “pizza” was topped with fruit.  My fruit of choice this time was strawberries, blueberries, raspberries and kiwi.

Ta da! Fruit pizza’s are really simple and can be customized very easily.

Personally, I’m more of a fan of the brownie version, but the sugar cookie base is good too!

Ease: A, very easy.  The hardest part is probably making the sugar cookie dough.
Taste: A+, not too sugary and heavy and definitely delicious!

Would I make it again? More than likely yes.  Now to figure out how to make the third time even better than the first two….  🙂
