Banana Butterscotch Cupcakes

What exactly is the difference between cupcakes and muffins?  Is there some kind of technical foodie difference, or is it just arbitrary? Someone please fill me in, I’d love to know if it is something more than arbitrary!

These “cupcakes” were right on the edge between cupcakes and muffins. They had a frosting that was supposed to go on them, but I didn’t have the time to make it, so I just called them muffins and decided that was good enough.  No one who ate them seemed to think they they were missing anything.

This recipe is from the book Cupcakes! by Elinor Klivans (the same book that I used for the frosting on the fruit pizza).  You can find the recipe online here.  (I didn’t make the frosting that is listed with it)

This recipe was not hard to make at all.  Just really a typical quick bread recipe.

Banana Butterscotch Muffin

I think they turned out pretty well.  They were definitely on the cupcake end rather than muffins as far as sweetness goes because of the butterscotch chips, but otherwise they taste pretty similar to banana bread.

Ease:  A, not hard at all.  You don’t even need to mash the bananas first!
Taste: A-, as I said in my previous experience with butterscotch, I don’t love it, but its not bad.  The cupcakes/muffins as a whole were pretty good.

Would I make them again?  I think so.  Does anyone have any tips for how to keep the butterscotch chips evenly dispersed throughout the muffin?  Mine seem to all settle near the bottom which makes the flavor even more concentrated and I think why I don’t enjoy them as much as I would if they were more evenly spread out.

  3. if you spray the chips with pam and toss them in a tiny bit of flour before you stir them in, they will not fall to the bottom 🙂
