Maple and Brown Sugar Oatmeal Muffins

Muffins are one of my favorite things to bake.  I’m sure this has to do with the fact that they are generally not complicated to make, and are usually pretty healthy.  (Well, unless they are more of a cupcake than a muffin.)

These were definitely on the muffin end, but still delicious.  This recipe comes from Heather of Hangry Pants and you can find the recipe here. (Edited to Add: Sadly Heather has stopped blogging, so this recipe is no longer available 🙁 )

Maple Brown Sugar Oatmeal Muffin

These were very easy to make, just mix everything together and bake!  I did use regular milk instead of almond milk and I left out the raisins.  These would definitely be a good breakfast or snack addition.  Heather wrote that she based the flavor of these off of the taste of maple and brown sugar instant oats that she used to love as a kid, and that taste is spot on!  I am currently a huge fan of these instant packets (although fresh oatmeal is SO much better than microwave) and I love them too!

Ease: A, not painful at all.
Taste: A, although they are on the “healthy” side, they don’t taste bad at all.  The brown sugar and maple syrup adds some sweetness, but it is not overwhelming.

Would I make them again?  Yeah, I think they would make a great addition to a brunch or breakfast buffet!

  1. Ha – I once heard that muffins are just an excuse to eat cupcakes for breakfast. 🙂 But I definitely agree that there are some less sweet, healthier ones out there. These sound amazing, especially with the cooler temps we’ve had lately!

  2. I hardly ever make muffins. I’m not even sure why. I think I need a better muffin tin because these look yummy, Kelly!

    • I never made them very much until I had a 12 cup muffin tin so that I could make a whole batch at once. I also ALWAYS use muffin papers, otherwise mine tends to be super hard to clean!

  3. These do look good. I bet they would be great with some diced apples and walnuts too! When fall hits, I go apple crazy. 😀 Though I did notice the author of the recipe does not like apples. LOL Thanks for the recipe.

  4. I am glad you liked them! They are definitely a good healthy muffin and I like that the base can be mixed with lots of things.
