Emergency Blondies for Two

There are many nights when I feel like a dessert  after dinner.  Really, I’d say that these nights by far outnumber the nights that I don’t want some kind of dessert.  However, this causes a dilemma for a few reasons.

  1. Do I have time to make dessert and still get to bed at a reasonable hour?  If I eat dinner at 8pm, by the time dinner things are cleaned up and I am relaxed and ready for dessert sometimes it is 9pm or later.  This does not give me a whole lot of time to decide which dessert  I want, make the dessert, eat the dessert and clean up after myself before going to bed.
  2. Making a dozen cookies and having access to all of their deliciousness is not always a good thing.
  3. Sometimes I am lazy and even though my stomach and brain tell me they want dessert, my body does not want to get up and physically make it.

These blondies  from The Chic Life were a great solution to all of these problems.  They are quick and easy and they only make two servings!  You can find the recipe here.  ( Also, if you haven’t made them yet, definitely make Diana’s Chocolate Chip Cookie Dough Balls.  I’ve made them in the past, and I had some that Diana made while I was at the Healthy Living Summit. So good. )

I chose to put chocolate chips in my blondie, but really you could put just about anything it them that you would put in a cookie.  The serving size is perfect – the size of your own personal little cake!

Ease: A, really easy.  I think they took 5 minutes or less to prep.
Taste: A, they are definitely more cake-like but they are still very good – especially considering how quick and easy they are to make.

Would I make them again? Yeah, I think so. She also has a recipe for quick single serving brownies as well that I definitely need to try soon!

  1. That’s a great idea. I’m glad I’m not the only one who thinks that dessert can be a true emergency :).

  2. I get that same craving after dinner… almost every night. I have started making big batches of cookie dough when I have energy, and freezing half in little balls so I have some in case of emergency. These blondies look like they would work for me too!

    • I’ve tried doing that with cookie dough before…..but it usually just ends up being eaten by my husband before I can make cookies out of it 🙂
