Zucchini bread is something that I have been making for years. I love the moisture that the zucchini brings. For some reason, after all these years, I never thought to turn this bread into muffins. When I read Alicia’s recipe for chocolate chink muffins made with zucchini, I knew I had to make them. Chocolate, Zucchini, I’m sold.

These were very easy to make – well, once you have shredded the zucchini. It is the basic mix wet, mix dry, combine kind of recipe. Oh, and don’t forget to add the chocolate chips like I almost did. 😉 They tasted delicious too! They were just chocolatey enough to be chocolate but not over the top.
Ease: A-, only less than perfect because it does take a bit of time and energy to shred the zucchini.
Taste: A, delicious without being too sweet.
Would I make them again? Yeah, I think so. They were delicious!
Side Note: I met Alicia briefly last winter when I visited CDNY and got to hang out with her quite a bit at HLS and she is one of the sweetest people I know. You should definitely go check out her blog Wannabe Foodie. Even though she doesn’t blog often, (she is a graduate student and has a part time job as well writing her blog) when she does post, the recipes and stories that she tells are always fantastic. I hope I can come back to the CDNY area again next February and hang out with Alicia and all of the rest of the wonderful ladies who live in that area. Maybe we can get some Sangria. 😉
