Sour Cream Chicken Enchiladas

I don’t love Mexican food.  I’ve never really been a fan of tacos, refried beans, sour cream or carne asada.  The main reason why I’ve always tended to stay away from it is because of the spiciness.  As I’ve mentioned before, I can’t really handle anything even a little spicy.  Mild salsa is my limit.

The husband, however, likes Mexican food quite a lot. Over the years we’ve been together I’ve learned that there are some Mexican foods that I don’t dislike as much as I thought.  Once I got over the fact that not everything has to be super spicy, I was a little bit better off.  (although the spiciness factor is often unpredictable when I’m at a restaurant.  I’ve learned that if they say “its a little spicy” then it is most likely too spicy for me.)

One of the foods that I generally enjoy is chicken enchiladas.  Well, when they aren’t filled with things other than chicken, cheese, tortilla and some kind of (non spicy) sauce. We have made enchiladas with red sauce at home a few times, but this time I decided to try something different.  The only thing that I knew for sure I would enjoy about this recipe: it would not be spicy.  You can find the recipe here.

The recipe was not very hard at all to make.  Well, I guess compared to pouring cans of red sauce over tortillas and chicken it is a little bit more difficult.

Overall they tasted pretty good too!  I don’t love sour cream, but this sauce wasn’t too creamy for me.  I actually made a couple of enchiladas with red sauce too (just in case I didn’t like the other sauce) so I ate one of each, and the combination was delicious!

Ease: A- there is a bit of prep work, but nothing horrible.
Taste: A, I actually really liked these! Eating a creamy with a red sauce worked out to a fantastic combination!

Would I make it again? Yeah, I think I would.  I would still make some with red sauce to combine with them too though.

  1. I too do not like overly spicy foods. Same here with mild salsa. I usually have to order sour cream @ restaurants with the salsa to cut the heat a bit. But I do LOVE Mexican food. One of my faves. These enchiladas look wonderful. I will try these next week.
