Another apple recipe!
My apple supply from a few weeks ago is slowly diminishing, but I still have a few left to use! This recipe comes from fellow Wisconsinite Jessica of Healthy Dairyland. Jessica is such a fun girl who I (finally) met at the Healthy Living Summit and have gotten to hang out with a couple of times since. I’m glad that even though she lives in Beloit now, she is willing to come up to Madison to meet up! You can find her recipe here.
Aside from grating the apples, this recipe was easy to prepare and bake. I would say that including cooking time it took about 30 minutes.
These are not super sweet muffins, definitely more on the breakfast muffin side instead of the cupcake side. That being said, I thought they were really good! They weren’t sweet enough for the husband to love them, but I enjoyed them as a yummy snack that wouldn’t leave me feeling like I ate a ton of sugar – dare I say they tasted healthy?
Mine did turn out a little bit dry, but I’m not sure if that was my measuring or the recipe. When I was putting the batter into the muffin tin it felt thicker than usual. They didn’t turn out bad though, they were just definitely on the lower end of the cooking time.
Ease: A-, grating the apple is the only thing that took a bit of time and patience.
Taste: A-, although they weren’t sweet, they were definitely tasty.
Would I make them again? Yeah I think so. I wonder if it would work to make this into a bread, I bet that would taste delicious! Can I just use the same recipe and adjust the cooking time, or will I need to adjust the ingredients for that? Anyone that is a more experienced baker than I am care to answer that question? 🙂
