Corn Flake Encrusted Chicken Fingers

Sometimes I joke about the fact that I have the eating habits of an 8 year old.  It might not be that bad, but I really could live off of macaroni and cheese, grilled cheese sandwiches, hot dogs, and chicken fingers.  Luckily, the variety of these foods that I eat and generally different than those that I ate when I was 8.  I also try to eat them less often.

When Anne posted about these chicken fingers on her blog fANNEtastic Food, I was immediately drawn to them.  They seemed easy, and something that I would definitely enjoy.  You can find the recipe here.

The recipe called for Erewhon Corn Flakes which unfortunately I couldn’t find at my grocery store, OR Whole Foods, so I used a different brand of corn flakes.  (If you use the Erewhon flakes, the recipe is gluten free!)

Corn Flake Chicken Fingers

The recipe was simple, just like a typical chicken finger recipe.  They turned out crispy and delicious!  What I especially liked about these was the flavor.  If I were to make these on my own with no recipe, I probably would have thought to use corn flakes, but the spices that Anne uses are not something that I would have been able to come up with on my own.  They were so flavorful and delicious!

Ease: A-, you do have to prepare  and coat the chicken, but other than that not difficult at all.
Taste: A+, I really liked these!  Crunchy, flavorful crust with tender chicken inside.

Would I make them again? Yeah, I think so! The combination of spices was great, and paired with some frozen veggies, or roasted potatoes they would make a fantastic, easy, meal!
