Apple Cinnamon Oatmeal Spice Cookies

I know I’ve talked in the past about how sometimes I get lazy and really want dessert, but don’t want to go through the hassle and mess of making it.  Well, Liz who blogs over at Little Bitty Bakes, has some great recipes that offer another solution to this problem.  Many of her recipes involve using a boxed cake mix with some simple additions to give it more of a home-made twist.  She has some really great looking recipes that I have bookmarked, and I cannot believe this is the first of hers that I’ve made! The only thing that I dislike about using a boxed mix as part of the recipe is that I don’t generally have that on hand.  A quick trip to the grocery store (or even Walgreens) can solve that problem!

Apple Cinnamon Oatmeal Cookies

Making these cookies was just as easy as I thought it would be.  Five ingredients, 3 steps, delicious cookies are the end product.  I will say though that my cookies turned out to be really more like a muffin texture.  The batter was pretty dry compared to other cookies that I’ve made,  so maybe this was the reason? Either way, they still tasted good!  And actually I liked the texture a lot.  Sometimes I don’t really like cookies with oatmeal as much because it gives them a pretty grainy texture, this was not the case with these cookies!

I somehow managed to not eat these cookies all at once (and keep them fresh!) so I’ve been eating them as a snack, and I’ve been loving having something at work to snack on that is a little bit sweet, but not so much that I feel like I go into a sugar coma in the middle of the afternoon.

Ease: A+, super simple.  5 ingredients.  Liz is great at making things easy.
A+, really good.  And even though the texture was not what I would have expected, I think I liked them more than if they would have been more of a cookie texture.

Would I make them again?  Definitely.  In fact, since they taste a bit like muffins to me, maybe I will make them in muffin tins? Oooh, and then top them with a streusel-like topping?  That sounds delicious!!

  1. Woohoo, A+ all around! Haha, I was actually going to call them breakfast cookies at one point because of their soft texture. Yum, I want one now!
