Fall Arugula and Apple Pasta Salad

Last weekend we got together with some friends for a fondue dinner.  (see yesterday’s Wordless Wednesday photos) They supplied two different kinds of cheese fondue and a chocolate fondue, as well as a few dippers.  Other people were bringing additional dippers, and I wanted to bring something but didn’t want to just have an overwhelming amount of food.  I had a really hard time deciding what to bring, and I went back and forth a few times before deciding on a salad.  But what kind of salad?  Pasta? Lettuce? Cold? Hot? I was still undecided.  If it would have been this weekend I probably would have made this salad that Savvy Julie just posted about, but since that post didn’t exist yet I had to look further.  I eventually decided that it needed to be something fairly easy (I only had a few hours at this point to get groceries and make this) and hopefully involved ingredients that I had on hand. I then remembered that the nice people at Garlic Goldsent me a few of their products to try a while back, (I’ve bought some of their products before and loved them!) and since garlic is something that I know most people really like, I thought that using these would be a good place to start. So, I went to the Garlic Gold website since I know that they have a bunch of different recipes on it, many of which are from fellow bloggers!

After looking through a few, I settled on this arugula and apple pasta salad.  You can find the recipe here.

Apple Pasta Salad

The recipe was not hard at all, but did involve a bit of prep work with the fruit and veggies.  The Garlic Gold oil that is in this dish is one of my favorite Garlic Gold products for sure.  Although I do like the nuggets, and that is more of what they are known for, I really think the oil is something that is SO easy to use in many different ways.

The photo above does not show the blue cheese on the salad since we left it on the side for people to put it on themselves, but I did have some on mine.  Oh, and those green things in the salad?  No, not the apples.  Asparagus! Apparently since I tried asparagus last week, I’ve decided that I actually like it.  I would never have guessed. This salad has a great balance of salty, sweet, and sour.  I served it room temperature, but I think it was intended to be eaten warm.  Either way it was delicious!  (I did sneak a few warm noodles and they were awesomely sweet with the garlic and honey on them!)

Ease: B+, there is quite a bit of prep, nothing difficult, just a bunch of things to do.
Taste: A, delicious warm, room temperature, or cold!

Would I make it again?  I think so! I think it will be a good potluck dish to bring in the future.  Something that can be a side for some, or a whole meal if there is nothing else that I like!

    Side effect = reeking for days, but it’s totally worth it.
