A while ago I saw a post on Carrots N Cake about a new way to make macaroni and cheese. It involved The Laughing Cow Cheese Wedges. I had seen them in the store before, but I really had no idea that they were any different than normal solid cheese. I was definitely pleasantly surprised to find out that it was actually much different! The first recipe that I made with this new found cheese was The Laughing Cow Mac N Cheese. No surprise, I loved it. I’ve made it many times since, and for the past few weeks I’ve actually been making it to take to lunch for the week since it also re-heats well!
Since the recipe calls for 3 wedges and the package comes with 8, I had a few left over to test on their own. I decided to take a couple to work and have them as a snack with crackers, since they were spreadable I figured it would be an easy snack.
They are not only an easy snack, but also a delicious snack! My favorite way to eat these is spread on Triscuits, or other thick, crispy, crackers. I’ve only had the Light Creamy Swiss so far, but I’ve heard great things about the Garlic & Herb and French Onion.
Another other thing that I really like about this is the packaging. Not only is the packaging super adorable, (I’m a sucker of cleverly packaged products) but it is extremely convenient! Each little triangle is pretty much the perfect size to spread on a snack size amount of crackers. The packaging serves as great portion control, as well as well as its own little container – which makes it even easier to take to work with me!
Added bonus: They sell them in bulk at CostCo!!

i am definitely a fan of laughing cow cheese too! my roommates in college got me hooked on them and now we’ve always got at least one container of them in the refrigerator! my favorites are the original and the garlic ones.
I really need to try those garlic ones, I’m a big garlic fan so I’m sure I’d love them!!
I love these little triangles. My favorite flavor is the light Blue Cheese… yum.
I used to love these, but now I can’t get back on board with them. Don’t know why! They just taste almost rubbery to me now…
But I agree – perfect portion and perfect spreadability (yes you read that right) on crackers.
That totally happens to me. I eat something almost obsessively and then don’t eat it again for a very long time.
Also – I love the word spreadability 🙂
We’re pretty big fans of Laughing Cow as well, though I only buy them occasionally. They’re perfect for adding to lunches and eating with crackers or vegetables. Recently we tried the new blue cheese flavor and loved it.
