I love fall. The cooler weather, watching football, layers of clothing, and fall foods. For some reason I feel like I am more likely to cook foods at home in the fall. I don’t know if it is the cooler weather that makes me more likely to warm up the house with the oven, or just the fact that the weather is cooler so I am more apt to be indoors, but I’m hoping that this fall and winter will bring me to my kitchen more like it has in the pas. tIt seems like the most popular fall food – especially on food blogs – is pumpkin. The pumpkin spice latte has made its return at Starbucks, people are all over the pumpkin muffins, oats, etc. Personally, I’m not a fan of pumpkin. I don’t despise it like I do some other foods, but I definitely don’t enjoy it either. One of my favorite fall foods is apple. Apple cinnamon, apple pie, apple streusel apple butter, apple cider, I love it all.
One of my favorite ways to cook with apple is making apple cinnamon muffins. My Pinterest dessert board is filled with many different apple recipes that I’ve collected. I printed out a few of my favorites and have been making them as I get to the grocery store to get the ingredients that I need. The first recipe that I made was Apple Cinnamon Crumb Muffins from Two Peas and Their Pod. You can find the recipe here.
The recipe was fairly easy and straightforward. I didn’t have buttermilk so I substituted regular milk plus a tablespoon of apple cider vinegar and it seemed to work well! The flavor probably would have been a bit richer with actual buttermilk but they were still good! The thing that I liked the most about these, that was differnet to other apple cinnamon muffins that I’ve made, was the crumble topping. It was sweet and crumbly and since the muffins themselves weren’t very sweet this was a good addition.
Ease: A-, there is some prep work involved with the apples, but nothing too difficult.
Taste: A, delicious fall muffins.
Would I make them again? Yeah I think so. Next time I think I would add more cinnamon and maybe a bit more sugar to suit my taste, and make sure the crumbles were a bit smaller, but other than that they were delicious!
