I am not a huge granola fan.
Yes, I’ve tried it , in many forms, and I just don’t love it. I will eat it in Greek yogurt, or as a sort of crumbly topping on a muffin, but I’m not like some people who love it so much they eat it by the handful. I don’t love dried fruit, so maybe that has something to do with it, since most granola has some sort of fruit in it?
Even though I don’t love eating it, I do really enjoy making granola. Granola recipes are always fairly straightforward, and they are easy to customize. The past couple of years I’ve made various types of granola to give away as gifts, and my husband likes it so I make some for him, too.
Last week, I came across a new granola recipe. It is from Little Bitty Bakes, which is one of my go-to blogs to find easy, delicious, recipes. When I saw this Chocolate Chip Cookie Granola recipe, I knew I had to make it. Simple ingredients. All of them I enjoy. Hopefully I would even like it! You can find the recipe here.
Obviously I shouldn’t have been concerned at all that I wouldn’t like this. It tastes just like crunchy bits of cookie! I actually split the batch in two and put some peanut butter chips in half of it for my husband as well! This is definitely going on my Christmas gift baking list, it would be so easy to customize with a different kind of cookie dough, or different flavored chips. Another winner from Little Bitty Bakes!
Ease: A-, it is only less than a solid A because you do have to make a batch of cookie dough, and then you have to flip the granola a couple times while it is in the oven. Nothing else difficult at all.
Taste: A+, YUM.
Would I make it again? Definitely. It is on my Christmas baking list!
Oh, and with the leftover cookie dough, you can make chocolate chip cookies.
