Mint Chocolate Chip Funfetti Cookies

Sometimes the easiest recipes are the most satisfying.  Yes, there is something satisfying about making a super complex recipe and having it turn out delicious, but I think there is something equally great when the recipe is so simple and ends up tasting so delicious.   Liz is a pro at this easy and delicious combination.  This particular recipe uses cake mix as a base and turns into delicious cookies.  You can find the recipe here.

Mint is my favorite flavor of the season.  I don’t like eggnog, and I’m not in love with gingerbread, but I am a huge fan of mint.  (confession: I actually love mint so much that I drink mint lattes year round!)  The ease and delicious flavor of these cookies was right up my alley so I had to give them a try.

Tip: If you don’t have funfetti cake mix, you can just throw in some sprinkles and it works just the same!


These turned out really well!  They really were incredibly easy to make, too.  They were mint chocolate chip without being super rich chocolate which is what I feel like many mint chocolate desserts are.

Ease: A+ incredibly easy – everything is mixed in one bowl!
Taste: A+ a lighter mint chocolate mint combo

Would I make them again?  Definitely.  I may just have to pick up some cake mix and stash it in my cupboard for the next time there is a cookie emergency.

  1. Mmmm!! I spotted a cake mix in my mom’s kitchen this morning, you know what that means… more cookies! I’m glad you enjoyed the recipe, and I agree, complex recipes can be fun but more often than not, simple is my preferred route. 🙂 And A+’s, woohoo!

  2. I’m totally with you on the mint. I too, drink mint lattes year-round (extra mint). I also love Funfetti but for whatever reason the combo doesn’t appeal to me. However, I’m willing to take one for the team and give it a shot. 😉

    • Hooray for mint lattes year round! Yeah definitely give it a try, it is definitely a little different but I really liked it – especially when they are still warm and the chocolate chips are melty 🙂
