Balsamic Chicken with Strawberries and Goat Cheese

Full Disclosure: I was sent coupons for Just Bare Chicken in exchange for posting and reviewing their recipe.  All of the opinions are completely my own.

Chicken has been one of the few constants as far as my food preferences go.  It was one of the only sources of protein that I ate growing up, and to this day it still is the meat that I am most likely to eat.  Recently, Just BARE Chicken approached me about working with them on some reviews of their chicken and recipes on their site.  I was pretty pumped because this is the chicken I normally buy, and have been buying for quite a while!  Things that I love about this company and their chicken:

  • No added hormones or antibiotics – ever!
  • The chickens come from independent family farms in Wisconsin and Minnesota.  I love knowing that they were raised semi-locally. In fact, you can even trace your chicken back to the farm that it came from using their website!
  • Their farms are all American Humane Certified.  This means that a third party comes to the farms to verify that the chickens are all healthy, happy, and being properly taken care of through every step of the process.
  • They are doing what they can to reduce their carbon footprint and support renewable energy and sustainable practices.
  • I can find it at Target, as well as my local grocery store.  In an ideal world, I would love to shop at the local co-op for every single item of food I buy, but in reality that just isn’t possible.  I love that in recent years Target has added many more sustainable, eco-friendly, and ethically minded products to what they sell, especially when that means I don’t have to make another stop if I am picking some things up at Target on the way home from work and realize that I want chicken for dinner.

I’ve used this chicken for everything from stir fry to baked chicken tenders, and everything in between.  It always cooks easily and tastes delicious.


Just BARE Chicken has a pretty good listing of recipes on their site as well.  In fact, one of the first times that I heard of Just BARE was when they were doing a 5 ingredient recipe challenge last year! I’ve been eyeing a few of those recipes for a while, and I finally decided to make one this week.  I went with the Balsamic Chicken with Strawberries and Goat Cheese. I was having a hard time figuring out what to eat as a side with this chicken, but it just seemed like it would be perfect as a salad.  So, I picked up some mixed greens and chopped up the chicken and ate it that way.  The only other thing I changed was that I didn’t grill it because, in all honesty, making it on the stovetop was easier than firing up and cleaning the grill. Oh, and I also had some garlic bread with it…because bread goes with everything.


It turned out really well! It was extremely easy to make – I think the most difficult thing was probably chopping the strawberries….which isn’t really difficult at all.  The balsamic, strawberries, basil, and goat cheese flavors worked really well together, and I think it was even better in salad form.


If this recipe is any indication of how easy and delicious those 5 ingredient recipes are, I think I need to try some of the others!

Ease: A, really easy.
Taste: A, surprisingly tasty for how few ingredients are involved!

Would I make it again? I think so.  It is such a light but filling warm weather meal, and strawberries are one of my favorite foods so I think it is likely it’ll be made again.
