Hey look, a new recipe post!
I’ve been in a bit of a recipe rut for a while. Not that I’m not making decent things for dinner, but I’m making the same things that I’ve been making. Nothing new. So, I decided to try a new tofu stir fry. This one is of the sweet and sour variety. I found it on SparkPeople – here.
It is called Pineapple, Tofu, and Vegetable Stir Fry, but mine was missing the veggies. Not because I didn’t want them there – I would’ve put in the suggested bean sprouts, pea pods, or corn, if I’d had them, but I didn’t have any on hand at the time. The only other thing that I did differently is that I used the whole block of tofu, rather than the suggested 7oz, so I doubled the sauce as well.
It turned out to be really tasty! It was sweet, but not over the top, and pineapple was a great addition as well.
Ease: A-, there is a bit of work in pressing and slicing the tofu, but other than that not bad at all.
Taste: A+. One of my favorites in a while.
Would I make it again? Yes. Have already and will make it again in the future I’m sure.
