Cheesy Chicken Enchilada Style Burritos

We are always on the lookout for easy, delicious, and somewhat healthy weeknight dinners.  Especially with a baby’s schedule to work around, it sometimes seems like there is no time to spend on making dinner.  Simple enchiladas are something that we have found works well for us.  Fairly healthy and something that we can make with things we usually have on hand.  The thing about simple and easy is that sometimes it gets boring.  So, when I found this recipe for Cheesy Chicken Enchilada Style Burritos from Kevin and Amanda, I thought we would give it a try.  It still seemed fairly simple, but was just different enough from what we normally make.

The addition of hummus was something that I wasn’t so sure about.  I am not a big hummus fan, but since it was garlic flavored (I’m a big garlic fan) I thought I would give it a try since it would be baked into the enchilada anyways.

Unfortunately the enchiladas just weren’t our favorites.  They weren’t bad, and it was kind of nice to have a change, but we both agreed that we liked the other version that we make better.  These were just a little bit too mushy – likely because of the rice and hummus addition – and the flavor was really limey and garlicky in some bites.

Ease: A-, the rice making is a bit of a process since we usually just make rice in the rice cooker (could we have done that with this rice recipe even though it isn’t just plain water?) but other than that, not all that difficult.
Taste: B, not bad, but not our favorites.

Would I make them again?  I don’t think so.  We like the other version of enchiladas that we make better, and they are a bit less complicated to make than these.
