Hello and welcome to Brownies and Zucchini! My name is Kelly, I’m the person behind these words, and I am a picky eater.
This blog is all about diversifying my meals. My goal is to try new foods and talk about them on this blog. Expect lots of delicious foods – Breakfast, Lunch and Dinner- and especially Dessert!
I’m hoping that this blog will be a way for me to learn to try new foods. My meals tend to be the same, or very similar, day after day and by adding new foods into the mix, I’m hoping to be more excited about cooking and eating! Not to mention, there are many nutritious elements that are lacking in my current diet. (Lets just say, I could live off of bagels and pasta.) Over the past six (!) years that I’ve been writing this blog, I’ve realized that I really enjoy writing about food, so I’ve found myself actually WANTING to make new and different foods. This is definitely a step in the right direction!
These fun new meals that I make come from some of my favorite foodie blogs, as well as the small array of cookbooks that I own. Out of respect to those lovely people, I will not be posting recipes that are not mine on the blog. These people worked hard on their recipes and have wonderful blogs themselves that you should visit for yourself while you check out the delicious recipe that I made.
I also share with you some of the restaurants that I eat at. These will be not only some of my favorites in Madison, WI (where I live) but also in other cities that I visit for work and for fun. Diversifying my meals includes going to different restaurants and eating different meals at restaurants as well!

The husband – We got married in 2009 on our 8 year dating anniversary. He is the king taste tester of all of the meals I make – especially the ones that I am unsure that I will like 😉 We live in beautiful Madison, WI with one cat and one dog.
Olive, our pug, is 8, and was given to me by The Husband as a surprise for Christmas in 2007. (He really is the best at surprises.)
Our cat, Sasha (aka Miss Kitty) is from a local animal shelter. We got her in 2005 and she was a stray so we don’t know her exact age but she is a a young at heart adult. She is also the most social cat that I know, and luckily gets along well with Olive.

You will also probably hear about my experiences/experiments/fun with yoga, Pilates, and running….I’ve run a 8K, a 5K, and a two 10K‘s!
In January 2014, I ran the inaugural WDW 10K! Running at Disney World was pretty much the only running goal that I had so I am super pumped about that. Three cheers for Disney adding a 10k so that I feel like I had something attainable to reach for! (You can find the recap of that 10k here.)

My Aunt Lola’s Carrot Cake. read through before baking.
This is actually easy once you get the carrots grated. A lot of people have asked me for this recipe.
1-1/2 cup white sugar
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
Stir those together in a big bowl and then add 1 cup coconut (stir), 2 cups grated carrots (stir), 1/2 cup chopped nuts (optional). Then add 1-1/2 cups oil, 3 eggs, one 7-ounce undrained can of crushed pineapple, and 2 teaspoons vanilla. Pour the batter into a greased 9×13 pan (I have used a glass pan but the bottom always seems to burn, so best to use a metal one or, if you insist on glass, lower the temp to 325). Bake for about 45 minutes in a 350 degree oven or until the center isn’t raw…sometimes it takes an hour depending on your oven. (The batter is dark, and bakes darker still.) Top with whipped cream or ice cream, or frost with butter cream or cream cheese frosting.

Open wine with cork screw.
Pour into glass.
